Cooking With Wine: Wild Boar Roast

Wild boars are commercially farmed in Nepal and considered to be the royal food. One kilogram of chicken costs $2.5 where as one kilogram of wild boar costs $8.

Though wild boar roast is usually taken with alcohol, it is also considered a great appetizer.

Marinate time: 6 hours

Prep time: 20 min

Cook time: 30 min

Yields: One kg meat will make a great appetizer for four people

Ingredients

  • 500 ml Red Wine
  • 1 kg A single large piece of wild boar, You can also replace wild boar with pork
  • 1 table spoon Garlic paste
  • 1/2 table spoon Black pepper
  • 1 table spoon Cumin seed powder
  • 1 table spoon salt

Instructions

  1. Clean wild boar and make gashes. Mix garlic paste, pepper and cumin seed powder. Apply the paste on the meat thoroughly and season with salt. Pour some wine over the meat and let it marinate for at least six hours in the refrigerator. Turn the meat frequently to make sure every side is soaked in wine.
  2. Heat a fry pan, add some butter and place the meat gently on the pan. Turn the meat to make sure every side gets cooked thoroughly.
  3. Garnish with sliced lime and coriander leaves and chopped green chilli.

Hello snakeslane, wild boar are reared in a cage, fed with chicken and vegetables and have to be killed with gunshot. Once I had planned to farm wild boar but could not because of heightened insurgency I could not buy a gun.

@Frank, I do not eat pig but you can replace pig with wild boar. I have been told it could be as tasty as wild boar roast.

This recipe really sound delish. I have had wild boar and like the flavor, and the recipe you shared sounds very easy to do for allowing the flavors to develop, I think, is key for any wild game.

I thought this method would work great for leg of lamb as well. What do you think?

Lamb is little harder than wild boar so when I use this method to cook lamb, I use oven instead to fry pan.

I have never tasted wild boar. It is a hog, right? Any way it sounds like it MIGHT be good. I know the wine is yummy..HaHa

Angel, interestingly I'm allowed to eat wild boar but not pigs.
